Menu for the Week of January 2-9

Monday (leftover day): Sweet and Tangy Brisket

Tuesday (vegan): Quinoa Taco Salad

Wednesday: Enchiladas with some friends

Thursday (vegetarian): Thai Peanut Noodles

Friday: Chicken Masala, rice, Chugandhar Raita (recipe below)

Saturday (vegetarian): White Beans, Spinach & Tomatoes over Parmesan Toasts

Sunday: Paninis

Chugandhar Raita (a delicious Indian beet dish)

4 beets, med size, boiled,                    ¼ t whole cumin seeds

peeled, and diced (or frozen)         ¼ t ground black pepper

1 onion, finely chopped                      ½ c chopped fresh coriander

1 hot green pepper, finely chopped    2 c yogurt

1 t grated fresh ginger                         1 pint sour cream

salt to taste

Wash beets thoroughly to remove some of the color. Drain well. Mix all ingredients. Garnish with a pinch of fresh coriander. Chill and serve.

  1. Sounds wonderful! I have cumin seeds coming out my ears if you want some (not literally…ew).
